Folks we know from our Boston days came over to celebrate the 4th, and Head Chef cooked up an epic feast (thank you for feeding us, Chef!). Thanks to all for a fun time!!!
Cochinita Pibil: Achiote roasted pork shoulder wrapped in banana leaf, nestled in a dutch oven.
Jicama salad, incredibleness.

Mango salad, amazing.

Tortillas heated in a double-broiler, below pictured with the pork shoulder to make delicious tacos for the meat lovers.
Also featured: black beans, pickled red onion, chile con queso (a contribution from the bakery, believe it or not), and INCREDIBLE tomatillo salsa.
Drinks of the evening were made with Teacate, rum, lime, mint, and simple syrup.

Before heading up to the roof for some ghetto-fireworks as well as "professional" ones, from the bakery, coffee-chocolate cake with mocha mascarpone frosting served with a side o' vanilla ice cream.
SIDE NOTE: I can't turn off the stupid underlining feature on this blog.
Recipe courtesy Bon Appetit Magazine (click here for the link)--notice my frosting came out lighter than the one pictured on their website, and some folks actually complained about this in the comments section underneath the recipe.
Fabulous after dinner and for breakfast and lunch as well.
